BBQ Rabbit Casserole

Today we bring you the BBQ Rabbit Casserole!  Casseroles are awesome dinners that can you make ahead of time or whip up that day for dinner.  This one uses bbq sauce instead of creamy soup base; for a tangy change you're going like.  The best part is that if you have left over rabbit meat from another meal, it is going to work great in this casserole.bbq-rabbit-casserole

BBQ Rabbit Casserole

Ingredients:1 tablespoon olive oil1/2 onion, chopped1 red bell pepper, chopped1 cup frozen corn10 - 12 oz rabbit meat, cooked and shredded1 cup barbecue sauce1 (6 ounce) package cornbread stuffing mix1/2 cup low-fat milk1 cup shredded cheddar cheeseDirections:Preheat the oven to 375 degrees F.Heat the oil in a large saucepan over medium-high heat. Add the onions and cook until tender, about three minutes. Add the pepper and corn and cook another three minutes.Reduce the heat to low. Stir in the rabbit and barbecue sauce and heat through. Transfer the rabbit mixture to a 2-quart baking dish and set aside.In a large bowl mix together the stuffing mix, milk and cheese. Spread it evenly over the barbecue rabbit mixture. Bake for 20 - 25 minutes or until topping is golden brown and the sauce bubbles.
